Nayaas Pandu mirchi pacchadi (Red chilli pickle )

 


Pandu Mirapakaya Pachadi is a vibrant, spicy, and soul-satisfying red chilli pickle that is a staple in Telugu households. Known for its brilliant crimson color and fiery kick, this pickle is the perfect balance of heat, tang, and salt.

The Preparation

To make this, we use fresh Pandu Mirapakayalu (ripe red chillies). The process begins by grinding the chillies with Chintapandu (tamarind) and salt into a coarse paste. After letting it ferment for a few days, a fragrant tadka (tempering) is added.

Ingredients: Fresh red chillies, tamarind, salt, turmeric, and fenugreek powder (Menthula podi).

Popu/Tarka: Oil, mustard seeds (Avalu), hing (Inguva), and garlic cloves (Vellulli).
