fresh mutton pieces with bone are the main star along with pure nallennai or groundnut oil to fry the meat until crispy then we add plenty of allam vellulli gadda paste for that strong ginger garlic flavor mixed with spicy erra karam and special garam masala powder containing lavangalu darchina chakke and elakulu for aroma plus some dhaniya powder and jeera to balance the taste while plenty of uppu or salt acts as a natural preservative along with fresh nimmakaya rasam or vinegar to give that tangy khatta taste and finally some menthi podi and avalu powder for the authentic south indian pickle finish
