Nayaa's Magaaya pacchad(Mango Pickle)
Nayaa’s Maagaya Pachadi is the ultimate tribute to the traditional flavors of Andhra Pradesh. Made with sun-dried raw mango pieces, this pickle is a staple in every Telugu household, often referred to as the "Queen of Pickles." Unlike Avakaya, which uses fresh mango chunks, Maagaya involves a patient process of drying the mango pieces until they achieve a unique, chewy texture.
The Flavor Profile
The taste is a perfect balance of sour (khatta), spicy (teekha), and salty.
Aroma: The "vasi" (smell) of menthi pindi (fenugreek powder) and aava pindi (mustard powder) is intoxicating.
Tarka: It is finished with a hot tempering of nallennai (sesame oil), yendu mirapakayalu (dry red chillies), and hing (perungayam).
How to Enjoy It
There is nothing more comforting than Goramuddalu—hot rice mixed with a spoonful of Maagaya and a dollop of neyyi (pure ghee). It also tastes bhala (excellent) with perugu annam (curd rice) or as a side for pappu. Nayaa’s version ensures that "shuddhata" (purity) and "amma cheti ruchi" (mother's handmade taste) are preserved in every bottle.
